Step 1
Pre-heat the oven to 375 degrees.
Step 2
Line 2 baking sheets with parchment or silpat mats.
Step 3
In a large bowl add almond flour, Quest baking mix, baking powder and salt.
Step 4
Stir to combine and break up any large chunks. Set aside.
Step 5
In a separate medium sized bowl beat the egg whites until soft peaks form (about 5 minutes). Set aside.
Step 6
Grate the frozen butter and add to the flour mixture.
Step 7
Cut the butter into the flour using 2 knives or a pastry cutter until the mixture resembles course crumbs (using grated butter makes this much easier).
Step 8
Gently fold the egg whites into the flour just until the batter comes together. Try not to over mix.
Step 9
Drop biscuits onto the prepared pans (about 1/4 cup scoop per biscuit).
Step 10
Bake for 20 minutes or until the biscuits start to turn golden brown.
