This old-fashioned meat loaf is packed with tender chopped onion and bell pepper and topped with ketchup.   Serve with mashed potatoes and green beans for a meal that will remind you of Sunday dinner at Mama's table.

Mama's Meat Loaf

onion

green bell pepper

parsley

pepper

salt

garlic cloves,

egg, lightly beaten

(1-ounce) white bread,

Vegetable cooking spray

ketchup

Combine first 8 ingredients in a large bowl, tossing to moisten bread. Crumble meat over onion mixture, and stir just until blended. Pack mixture into a 9 x 5-inch loaf pan coated with cooking spray. Spread ketchup over top of loaf. Bake at 350&deg; for 1 hour or until meat loaf registers 160&deg;. Let loaf stand in pan 10 minutes.


Remove meat loaf from pan; cut loaf into 6 slices.


Sandwich suggestion: Serve leftover slices on whole-wheat bread with mayonnaise, lettuce, and cheddar cheese.

I've been making this recipe for years and it turns out great every time. I make it exactly as instructed, except I use bottled chili sauce instead of ketchup for a little extra kick. This loaf has a looser texture than some, and there's a good amount of juice in the pan after baking that needs to be poured off -- perhaps a result of the peppers and onions mixed in. Excellent flavor, though, and pretty much foolproof! 

My husband and I really loved this recipe, it was very moist and very tasty.  I do think it could be cooked longer then one hour, ended up slightly pink.  I loved the process of the recipe adding the meat at the end.  I also used the beef, pork and veal combo pack. Thanks!

I sneaked a few more vegies in for my kids.  They didn't notice.

It was good but the timing is way off!!! I know i am not wrong My oven is brand new and it cooked for 2 hrs!!

Just made this tonight for my boyfriend's birthday - he requested meatloaf.  I added a little more onions, garlic and bell pepper than the recipe called for, and also added some cayenne powder and crushed red pepper (we like spicy), but otherwise followed the recipe.  We both loved it.  I served it with garlic-parsley mashed potatoes, and roasted broccoli, cauliflower and asparagus.  I'll definitely make this again - I think we both like it better than the Italian Meatloaf, so it will likely become my go-to meatloaf.

This was so easy and so delicious. My husband raved about it which does not come easily for a meatloaf recipe. I substituted red bell peppers for the green and was a bit more heavy on the garlic. I also used a whole grain white sandwich thin for the bread. The texture was fantastic. Finally - I used reduced sugar ketchup. Yum!!

After having not made meatloaf for years, my mother and I tried out this recipe about a year ago. It has wonderful flavors in it and is healthy when using extra lean ground beef. It makes a quick and easy winter meal.

This is the best meatloaf! You will not be disappointed! Yum!
I made it with only one pound of ground round and it also turned out great
