In a bowl, add semolina. Transfer sugar, baking powder, and cardamom powder and mix well.

In this dry mixture, add oil and mix well. To this add mango pulp and incorporate well.

Add vanilla extract and mix well.
Step 4
Let the batter sit for 15-20 minutes so that the mango pulp gets absorbed by semolina.
Step 5
Preheat the oven to 170C.
Step 6
Pour the batter into a greased loaf pan. Garnish with some pistachios and bake at 170 C for 30-35 minutes. If it starts browning, lower the temperature a bit.
Step 7
Insert a toothpick in the centre of the cake to see if it is properly baked. If it comes out clean, then it is done. Take it out of the oven and let it cool completely.
Step 8
Unmould the cake and serve.
