Preheat the oven to 350 degrees F. Spray a 9 x 13-inch casserole dish with cooking spray.
Step 2
Cut the chicken breasts in half lengthwise (or cut into 1 1/2-inch cubes) and arrange down one long side of the casserole dish. Line up the beans down the center of the pan. Cut the potatoes in half (or into smaller pieces if they are larger than 2 inches), and lay them down the length of the pan in the remaining space.
Step 3
Arrange the butter over the contents, with most of it on top of the chicken and potatoes. Sprinkle the seasoning mix over the entire dish. Cover the dish with foil and bake for 1 hour. Check to see that the potatoes are tender; if not, remove the foil and bake for an additional 15 minutes.
