Meyer Lemon Bars

Step 1

Cream the butter and sugar in a bowl.

Step 2

Mix in the flour and salt until it comes together.

Step 3

Press it down into a greased 8 inch square baking pan.

Step 4

Bake in a preheated 350F/180C oven until golden brown, about 20 minutes.

Step 5

Beat the eggs and sugar until smooth.

Step 6

Mix in the lemon juice and zest.

Step 7

Mix in the flour.

Step 8

Pour the mixture onto the crust.

Step 9

Bake in a preheated 350F/180C oven until set, about 20 minutes.

Step 10

Let cool and sprinkle with confectioners sugar.
