Export 7 ingredients for grocery delivery
Step 1
1. In a mixing bowl, combine all of the ingredients except for avocado and tortillas. Stir together.
Step 2
2. Cut each tortilla into quarters using a pizza cutter or a knife.
Step 3
3. To make the mini burrito, spread a small amount of mashed avocado in the middle of a tortilla, making a line from the corner of the tortilla to the opposite side. Place a tablespoon of the hummus-bean mixture on top of the avocado. Gently fold the tortilla corner over the filling and then start to roll up one side of the tortilla over the filling, tucking the filling in as you roll up the burrito. Use a toothpick to hold the burrito together and place on a serving platter.
Step 4
4. Serve or keep in the refrigerator until ready to serve (up to 6 hours).
