Step 1
Preheat oven to 375℉ and line a baking sheets with parchment paper and set aside.
Step 2
In a medium bowl mix flour, baking soda, baking powder and salt. Set aside.
Step 3
Beat in egg, vanilla, mint extract, and food dye until light and fluffy (about 1 minute). Fold in the flour mixture until combined.
Step 4
Add chopped mint candy and chocolate chips, and mix well (I like to fold in the chocolate chips).
Step 5
Roll or scoop cookie dough and roll into balls (I like to use a 2-3 tablespoons cookie scoop). Place them evenly spaced on your prepared cookie sheets.
Step 6
Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown.
Step 7
Let them sit on the baking pan for 2 minutes before removing to cooling rack.
