Step 1
In a large pot put in all vegetables and garlic with a drizzle of olive oil. Allow them to cook for 10 minutes, whilst stirring then add liquid stock and stock powder.

Place chicken breasts into pot, and if the liquid doesn’t cover the chicken add some more hot water till it does.
Step 3
Place lid on top and let cook for 20 minutes.
Step 4
Take the chicken breasts out of the pot and on a chopping board shred the chicken with two forks. They should fall apart quite easily.
Step 5
Take the pot off the heat, place the pulled chicken back into the pot and serve with some warm crusty bread.
