Step 1
Rub short ribs with olive oil, then season the short ribs with BBQ rub.
Step 2
Add pellets to NWG pellet hopper.
Step 3
Set NWG to smoker setting at 250F (121C). You can leave the default time as is.
Step 4
Hit the start button and let NWG go through the ignition process.
Step 5
Add short ribs to NWG, shut lid and start smoking the short ribs.
Step 6
Check on the short ribs every 30 minutes to make sure they’re not drying out, spitz with water if they appear dry.
Step 7
Smoke the short ribs for 1 hour. After that hour add another cup of pellets to hopper. Press and hold the Woodfire button for 3 seconds to restart the pellet burn process.
Step 8
Continue cooking until the internal temperatures of the short ribs hit 205-210F (96-99C) and they are probing tender.
Step 9
Remove short ribs from NWG and enjoy!
