Step 1
Combine pork, seasoning and flour in a large bowl. Heat oil in a large heavy-based saucepan over a medium-high heat. Add the pork and cook, stirring occasionally, for 3-4 minutes or until lightly browned. Transfer pork to a plate.
Step 2
Add the onion and capsicum to the pan. Cook for 2-3 minutes or until onion is soft and translucent but not coloured. Add the beans, corn and 125ml (½ cup) of stock. Scrape to dislodge any bits that have cooked onto the base. Add remaining stock. Add pork. Bring to a simmer. Reduce heat to low. Cover and simmer for 2 hours or until pork is tender and sauce has thickened (see tip). Stir in cream and cheese.
Step 3
Sprinkle with coriander and serve with rice.
