Step 1
Pour the water into a small bowl and sprinkle the gelatin over the surface of the water in a single layer. Don't just pour it in and let it clump together.Let stand for 5-10 minutes to soften.
Step 2
Add the cream, sugar, and vanilla extract to a small saucepan over medium heat and bring to a light boil to allow the sugar to dissolve. Remove the pan from the heat.
Step 3
Stir in the gelatin mixture and immediately whisk until completely incorporated and the mixture is smooth and the gelitin is dissolved. *If the gelatin hasn’t fully dissolved, return the saucepan to the stove and heat gently over low heat. Stir constantly, not allowing the mixture to boil.
Step 4
Pour the panna cotta cream into four serving dishes.
Step 5
Refrigerate for at least 3 -4 hours to give the dessert time to set up.
Step 6
Serve with fresh berries and garnish with mint leaves.
