Pasta e Fagioli

olive oil

Heat the oil in a large saucepan over medium-high heat. Add sausage and garlic; saut&eacute; 2 minutes or until browned, stir-ring to crumble. Add water, broth, and tomato sauce; bring to a boil. Stir in pasta, 1/4 cup cheese, oregano, salt, pepper, and beans; bring to a boil. Cover, reduce heat, and simmer for 8 minutes or until pasta is done. Let stand 5 minutes; sprinkle with 1/4 cup cheese. Garnish each serving with parsley and red pepper, if desired.


I am surprised by the positive ratings on this.  Mine was awful.  I don't know if it was the Romano cheese or the type of Hot Italian sausage I used, but this was almost game-y tasting.  But giving all the glowing reviews I might have to try again.

This soup is so easy.  The only thing I did different was to add a can of tomatoes.  It freezes beautifully.  Delish.

Loved this recipe and it's really easy. I've been avoiding soups for dinner because my boyfriend refuses to consider soup a "meal" but he really liked it and agreed it was filling. I used one can of red kidney beans and one white, also three cups of chopped fresh spinach for a little more color.

Made w 2 links of Italian Chicken sausage and broth instead of water.  Delish!  Gobbled up by husband and 7 year old.

Good basic recipe, but I had to improvise given the ingredients I had on hand and added some others for flavor:  1/2 cup diced onion, 1 carrot diced, 1 stalk celery diced; 2-1/2 cups chicken broth, and a 14-1/2 oz can diced tomatoes instead of water and tomato sauce; 1-1/2 Tbsp minced, fresh oregano; hot Italian sausage istead of mild (omitted pepper flakes); and 2 cans red kidney beans.  Colorful and tasty result.  Even better the second day.

Nice enough soup and better the next day, but I much prefer another CL recipe-Italian Sausage and White Beans.  Almost the same idea, but minus the pasta and plus red/green pepper, tomatoes and basil.

This was very easy to make and so delicious!  I made it vegetarian, so I omitted the sausage and used vegetable broth.  I also used fresh garlic and substituted one can of the white beans for kidney beans.  Next time I may try adding onion or fresh veggies.  This recipe is going into my regular rotation.

Wow! Considering how fast this comes together, it's an amazing soup.  We didn't even bother with the cheese on top because it was so yummy.  Served it with a baguette and a green salad with dried blueberries, green beans, and blue cheese.

My two year old loves this.  I use ditalini pasta since it is nice and small and otherwise follow the directions. The shape is also similar to the beans so we get more beans eaten by the kiddos.  For left overs, I just make sure to add extra chicken stock or water when reheating to thin it a little.

This is such a delicious soup!  It does get very thick and I did thin it a bit.  I doubled the recipe, but wish I would have made more for leftovers (served to 4 adults and 4 children and it was gone!)  Served with a side of buttered ciabatta bread for dipping.  I also minced up some zucchini to get some added veggies in there.  Added a bay leaf, some basil and rosemary as well.  I did what others suggested and simmered the broth for an hour or so, then added the beans, simmered some more, then added the pasta shells just before we were ready to eat.  Topped with some fresh shredded parm cheese.  Can't wait to make again!

Wonderful soup, just like the ones I tasted in Italy. I did eliminate the sausage since no one in my family likes it.

This was excellent!  One of the best soups I have made from this website.  I followed the recipe exactly except I sauteed an onion before added the sausage and garlic.  Will definitely make this again.

Very easy to prep, satisfying results.  Began with 1c chopped onion, cooked til transparent.  Subbed broth for water, ditalini for shells &amp; fresh oregano for dried.  Otherwise, made to recipe.  Served with spinach salad and breadsticks.  (Added broth to the leftovers when reheating.)

Yummm. It's a snowy winter night and I decided to give this soup a try. So delicious! I made it with a half an onion, 1 red pepper and 1 small zucchini to add some vegetables to it and it turned out perfect! I sauteed the vegetables with the sausage and then let everything simmer for about 40 minutes. The flavors are perfect :)

Simple, quick and delicious, even the second time around when I realized I was out of white beans.  I added a little Italian seasoning, granulated garlic and crushed red pepper with the sausage when cooking, and then added a splash of red wine with the chicken broth, water and tomato sauce.  Comes together in minutes!

Jennie-O hot turkey sausage and Pecorino/Romano cheese. This is a keeper...I would certainly make this recipe again...and again...and again!!!!

This recipe is delicious!!!  Definitely a simple, rustic, comfort food.  Make sure you simmer all of the ingredients for at least 30-40 minutes before adding the pasta.  Then cook for an additional 15 minutes with the pasta in.  I usually add a little more broth and sauce to account for the additional cooking time; I make it in a dutch oven and it comes out delicious every time.  I once added baby spinach toward the last minute or two of cooking and that was delicious as well.  Enjoy!!

This is great...super easy and quick. Very tasty and filling. I added some dried basil and used navy bean so they would be smaller. I also floated a piece of whole grain garlic bread on top to use for wiping the bowl at the end.

This recipe was super easy and tasty. I made it just like the recipe except added more water. (I think I just simmered it uncovered too long). Serve with some good, crusty, rustic bread for a hearty and simple meal.
