Step 1
Cook peas in a large saucepan of boiling water following packet directions. Drain. Process in a food processor until coarsely pureed. Set aside to cool.

Lightly whisk the eggs in a bowl. Sift in the flour. Add milk, haloumi, shallot, dill and pea puree. Season with pepper. Stir until combined.
Step 3
Heat 3 teaspoons of oil in a frying pan over medium heat. Add 5 tablespoonfuls of batter. Flatten slightly. Cook for 3 minutes each side or until cooked through. Place on a plate. Repeat, in 3 more batches, with remaining oil and batter. Serve with lemon and dill.
