Step 1
Peel and chop all three peaches into thumb-sized chunks.
Step 2
Dump the chunks into a small mixing bowl, then pour the sugar over the chunks. Stir briefly to ensure all chunks are coated with sugar.
Step 3
Allow the chunks to sit undisturbed for two hours; this will draw the syrup from the peaches.
Step 4
Pre-heat a 12" pan on medium heat. After two hours, pour the peach chunks and syrup into the pan.
Step 5
Allow the mixture to simmer for 15 minutes, stirring occasionally.
Step 6
After 15 minutes, remove the peach pieces with a ladle or large spoon and drain excess syrup back into the pan.
Step 7
Return the peach chunks to the pan, then add enough to the syrup to raise the liquid level in the pan just above the top of the chunks
Step 8
Simmer the mixture for an additional 15 minutes, then pour the mixture into clean glass canning jars. If the preserves are to be served immediately, allow to cool for 15 minutes, then serve with batter bread, toast, or any dense bread of your choosing.
