Preheat the oven to 160°C (approximately 320°F).

Peel potatoes and thinly slices. Blanch in salt water for 1-2 minutes and drain well. Peel onions and cut into rings. Melt butter and grease the casserole dish. Rinse parsley, shake dry and pluck off leaves. Place a third of the potato slices in dish, brush with a little butter, season with salt and pepper and sprinkle with half of the onions. Add half the parsley and half the salami. Add another layer of potatoes, season with salt and pepper, cover with remaining onions, parsley and salami and top with the remaining potatoes. Season with salt and pepper and brush with remaining butter. Bake until golden brown, about 1 hour. Remove and serve hot.
