Preheat oven to 400 F
Step 2
Once pie crust has been at room temperature for about 10 minutes, roll it out on a sheet of parchment paper to about 12 inches in diameter. It doesn't have to be perfectly round.
Step 3
Take berries or fruit of choice from freezer, and combine in a bowl with the cornstarch and sugar. Arrange fruit in the center of the pie crust, leaving a 2 inch border of crust.
Step 4
Any remaining sugar and cornstarch, go ahead and sprinkle of the the fruit.
Step 5
Now, start folding the crust over the fruit, pinching each corner gently. When you have finished, your galette will be tightly wrapped in it's crust.
Step 6
Brush the crust with the beaten egg, and place the parchment paper and galette onto a baking sheet.
Step 7
Place pan into the 400 F oven on the bottom rack and bake for about 50 minutes. The crust should be golden brown, and firm on the sides.
Step 8
Sprinkle lightly with powdered sugar after it cools, and serve with vanilla ice cream if desired.
