Export 5 ingredients for grocery delivery
Step 1
Preheat the oven to 375 degrees Fahrenheit (190°C) and line two baking sheets with parchment paper.
Step 2
Melt the butter in the microwave, and set aside to cool to room temperature.
Step 3
Using a whisk, gently mix the powdered sugar and cornstarch in a small bowl until blended. Set aside.
Step 4
In a large mixing bowl, beat the cooled butter, eggs, and lemon zest until smooth. Then add the cake mix and stir until a soft dough forms. (add any extras at this point)
Step 5
Cover the bowl and chill the cookie dough in the refrigerator for 30 minutes.
Step 6
Using an ice cream scoop, portion the dough into 1-inch balls. Then, thoroughly coat each portion in the powdered sugar mixture until they're white all over.
Step 7
Arrange the dough balls on the cookie sheet 2 inches apart, and bake on the center rack for 9 to 11 minutes. Transfer to a wire rack to cool, and enjoy!
