Step 1

In a bowl, combine all the dry ingredients together and mix. (flour, sugar, salt, yeast)

Step 2

Once dry ingredients are mixed, add the remaining wet ingredients making sure the butter is not too hot, otherwise it will kill the yeast.

Step 3

Place into a stand mixer and mix for 5 minutes over medium speed or until thoroughly combined. Make sure to scrape the edges down. This dough should be quite wet.

Step 4

With the help of a pastry scraper, form a uniform and smooth looking ball then place back into the bowl with a touch of olive oil to rest for 1.5 hours or until doubled in size.

Step 5

Once doubled, punch out all of the air, then shape into 75g dough balls, lay over parchment paper that has been dusted with corn meal, dust the top of the dough with more corn meal, and cover with plastic wrap to rest another 30 minutes.

Step 6

Heat up a lightly oiled cast iron skillet over med-low heat.

Step 7

Flatten each individual dough ball until they are ¼ inch in thickness.

Step 8

Place flatten doughballs onto the heated cast iron then cover with a lid to cook for 5-7 minutes each side.

Step 9

When assembling the sausage egg mcmuffin, make sure to heavily butter each bun to replicate the McDonalds flavors.

Step 10

Combine all sausage ingredients into a bowl then form into 8oz balls.

Step 11

Heat up a pan over med-high heat with oil then drop the sausage into the pan and flatten until it forms a thin patty.

Step 12

Flip once each side is nicely browned.

Step 13

Heat up a pan over medium heat.

Step 14

Melt butter inside of cookie cutter mold then crack an egg inside

Step 15

After 1 minute, pour 2 tbsp of water into the pan and cover with a lid until yolk is cooked to desired temperature.
