Heat oil in a 4-quart Dutch oven (or similar) placed over medium heat. When the pan is hot, add the onion, celery, and carrots and cook, stirring often, until the veggies have softened and are beginning to brown, 5 to 7 minutes. Season generously with salt and pepper. Cover and let cook for 25 to 30 minutes, or until the farro is tender but still a bit chewy. In the final minutes of cooking, add in the greens. Cover and continue cooking until just wilted, about 2 minutes more. Serve immediately topped with Parmesan cheese and a side of garlic bread. Store leftover soup in an airtight container in the refrigerator for up to 3 days.
