Step 1
In a sauce pan, combine the stock and the oats and simmer over medium low heat for 35 minutes. Stir occasionally.
Step 2
While the oats simmer, prepare all the fresh produce.
Step 3
In a large frying pan with a tsp of oil, sauté the onion for 2-4 minutes on medium low and add the peppers and ½ the spice mix. Stir to combine. Cook for an additional 2 minutes and add the beans. Reduce the heat to low and stir.
Step 4
When there is 15 minutes left on the oats add ½ the spice mix and the miso paste and stir to combine.
Step 5
When the oats are done, spoon into a bowl and top with the pepper and bean mixture.
Step 6
Garnish with cilantro, tomato, avocado, nutritional yeast and lime.
Step 7
Serve warm and enjoy.
