Step 1
Fill a shallow bowl or plate with warm water. Gently dip one rice paper sheet into the water for 5-10 seconds, just enough to soften it.
Step 2
Place the wet rice paper on a flat surface or cutting board. Add 3 shrimp in the center, and sprinkle some chopped green onions on top.
Step 3
Fold the sides of the rice paper inward, then roll it up tightly, making sure the ingredients stay tucked in. Repeat the process with the remaining rice paper and shrimp.
Step 4
Brush some oil on top of the noodle rolls to prevent sticking.
Step 5
Place the shrimp rice noodles on top of a plate, then place the plate into a steamer. Steam for 3-5 minutes or until the shrimp is cooked through.
Step 6
For the sauce, mix light soy sauce, dark soy sauce, oyster sauce, sesame oil, and water into a small bowl.
Step 7
Pour the sauce on top of the noodle rolls. Drizzle some chili oil if desired and sprinkle more green onions on top. Serve immediately and enjoy!
