Step 1

Heat oil in a large frying pan over high heat. Add mince and seasoning and cook for 10 minutes, breaking up with a wooden spoon, until browned. Stir in chickpeas and tomato and cook for a further 5 minutes.

Step 2

Toast bread until golden.

Step 3

Coarsely chop half of the mint. Combine mint and yoghurt in a small bowl.

Step 4

Divide toast amongst serving plates. Top with mince mixture, yoghurt and remaining mint.
