Step 1
Pour hot water over the dry vermicelli or bee hoon. Allow to soak for about 10 minutes, or until noodles are soft and malleable. Drain and option to rinse with water to stop the noodles from cooking further.
Step 2
While noodles are soaking, prepare the seasoning sauce. Combine all the sauces and set to one side.
Step 3
Add oil to a pan, and let it get hot over medium heat. Once hot, add onions and garlic and saute until fragrant.
Step 4
Once fragrant, add the carrots and cabbages, and give a quick stir to combine. Add a bit of water to cook down and soften the vegetables. Option to cover with a lid so vegetables can steam and cook quicker.
Step 5
Once vegetables are soft, or all the liquid has evaporated, add the seasoning sauce and the vermicelli.
Step 6
Toss to combine. Once vermicelli is evenly coated, noodles are ready.
Step 7
Plate noodles, garnish with spring onions. Top with your favourite sides!
