Step 1
Heat a large non-stick frying pan over medium-high heat and spray with oil spray. Rub the lamb with a little olive oil and sprinkle with salt and cracked black pepper. Cook the lamb, turning occasionally, until browned on all sides. Transfer to a plate.
Step 2
Use a sharp knife to cut deep slits in the meat (don't cut all the way through) and fill with the garlic slices.
Step 3
Slice the extra head of garlic in half through the middle and place in the bowl of a slow cooker. Top with the lamb. Sprinkle lamb with the oregano. Add the lemon and stock to the bowl. Cover and cook according to the slow cooker manufacturer’s instructions until lamb is tender. Transfer lamb to a plate, cover and rest for 10 minutes. Slice and divide between serving plates. Drizzle with remaining cooking juices and serve with steamed vegetables.
