In a medium bowl - Mix together 1lb sausage, 1 cup soberdough Hatch Green Chile Cheddar mix, 2 tbsp Scorpion Rub, and grated pepper jack cheese or Cheddar cheese. (If you like your sausage balls more bready, add more soberdough mix. About half a cup) There is 3 cups of soberdough mix so you could do multiple batches.
Step 2
On a baking sheet line with parchment papper. Roll mixture in 1 inch balls and place on sheet about 1 to 2 inches apart from each other.
Step 3
Bake at 350 for 20 to 25 minutes.
