Step 1
Combine water & sugar in a small saucepan and bring to boiling over medium heat. Cook and stir until the sugar has dissolved. Remove from heat & allow to cool completely.
Step 2
Combine the watermelon and lime juice in a blender and puree until smooth.
Step 3
Pour & press through a mesh strainer to remove any pieces that did not fully incorporate. This can be easily done by placing the strainer over a large pitcher.
Step 4
Pour the sugar mixture into the watermelon mixture and stir. Pour into the pop molds.
Step 5
Freeze at least 4-6 hours before serving.
