Wash whole potatoes before starting.Cut potato in half (½), cut that half in half again(¼) and each quarter, in half once more (⅛), that will make 4 wedges..... repeat with the other half there will be 8 wedges. Repeat with other potatoes to make 24 wedges in total. Hope that makes sense? It is harder to describe than do!
Step 2
Place curry powder, garlic, salt, pepper and olive oil in a large bowl or a ziplock bag.

Mix together

Add the wedges and mix to coat
Step 5
Place on a baking tray skin side down. Making sure they have space between each wedge to cook evenly. Use 2 trays if needed?
Step 6
Cook for 35-40 minutes, no need to turn if placed skin side down
Step 7
Place in air fryer tray, allowing space between each wedge to cook evenly. Cook in 2 batches if you have a small air fryer.
Step 8
Cook for 15-20 minutes, turning the wedges halfway through.
