Step 1
Cut the tops off of half of the Strawberries and place them in a blender with the Non-Dairy Milk. Blend until smooth and creamy, around 15-20 seconds. Dice the remaining Strawberries and set aside.
Step 2
Add the Oats to a large pot with the Strawberry “Milk”, Vanilla, Maple Syrup, and a pinch of Salt. Bring to a simmer over Medium heat; once the mixture starts to bubble, stir the remaining Strawberries into the Oatmeal (but save a few to put on top!) Let simmer over medium heat for 5-10 minutes or until your desired thickness is reached. Stir frequently – this helps to make everything more creamy!
Step 3
Transfer the Oatmeal to serving bowls and top as desired. Leftovers will keep in the fridge for up to 5 days.
