Step 1
Preheat the oven to 450ºF. Roll out the crust and then place it into a pie dish. Trim the edges as you prefer. Line the pie crust with two layers of aluminum foil or parchment paper. Bake it for about 8 minutes. Remove the foil or parchment paper and bake it for about 5 more minutes. Cool it on a wire rack.
Step 2
In a small saucepan, bring the sugar, water, and cornstarch to a boil. Let it cook for approximately 2 minutes. Remove the mixture from the heat and add the gelatin. Stir until it's completely dissolved. Refrigerate the mixture until it is slightly cooled. Just about 15 to 20 minutes. While the mixture cools, take this time to prep your berries!
Step 3
Clean and hull the strawberries. Cut them in half or slice them if you prefer smaller pieces. Arrange the strawberries into the prepared crust. Pour the gelatin mixture over the strawberries. Refrigerate until set.
Step 4
Top each slice with whipped cream if desired and enjoy!
