Step 1
Add the sugar and strawberries to a small pot or saucier. Use a masher to crush the strawberries into the sugar. They will release their juice and mix it with the sugar.

Add the water to the pot and stir it to combine.

Heat the strawberry mixture over medium-low heat. Stir gently until the sugar is fully dissolved. It should take less than 5 minutes. Do not boil it.
Step 4
Remove from the heat and allow it to sit for 20 minutes. Don’t stir it.
Step 5
Strain into a fine mesh strainer lined with cheesecloth or a straining bag.
