Step 1
Preheat oven to 200°C (220˚C fan forced). Place potatoes on a baking tray and cook in the oven for about 45 minutes or until tender.
Step 2
Fry bacon in a hot frypan and let cool. To make the filling mix together mustard powder with sour cream, chives and bacon, then season to taste.
Step 3
Remove potatoes from the oven. Use a clean tea towel to hold and then spoon out about 1/3 of the contents of each potato, leaving the outer skin intact.
Step 4
Combine the removed potato with the filling mixture and spoon it evenly back into each potato. Serve immediately or keep warm in oven before serving.
