In a separate large mixing bowl, combine the flours, salt, sunflower kernels, flaxseed and mix of dried fruit. Add the buttermilk mixture and blend until just combined; the batter will be loose. Divide evenly between the loaf pans and bake for about 1 ½ hours or until a toothpick inserted in the center comes out clean. Transfer the breads from the pans to two clean dish towels and wrap loosely. Let the loaves sit for at least 5 hours before cutting.
