Sweet Potato Fries

peanut oil, for frying

salt

garlic powder

smoked paprika

sugar

cornstarch

club soda, cold

sweet potatoes,

Heat the oil to 375 degrees F in a heavy-bottomed Dutch oven or deep fryer. Preheat the oven to 200 degrees F.

Mix the salt, garlic powder, paprika and sugar in a bowl and set aside.

Whisk the cornstarch and club soda in a mixing bowl. In batches, dip the potatoes in the batter, allow any excess to drip off and hold on a wire rack. Repeat with rest of the potatoes.

Fry half the potatoes, stirring occasionally until golden brown and crispy, 6 to 8 minutes. Sprinkle with the seasoning and hold in the oven on a paper towel-lined baking sheet. Repeat with the last batch of potatoes.

Very tasty..my first batch came out over cooked (darker than the pic recipe) my advice is lower the temperature if your using a deep fryer to about 300 deg. and it came out perfect.

The flavor was excellent. I’m not a big sweet potato fry person (I made them for my husband who’s a huge fan) but we both enjoyed these. I liked the spice combo very much also - so much so that we didn’t even need any condiments (ketchup, etc....). My only issue was that they stuck together when I put them in the hot oil. It’s like they gravitated to one another! I couldn’t separate them - so even when they finished frying they were still together. If I could solve that problem they would be pure perfection.   

Excellent fries! I've made them twice now and they are fantastic. I use water instead of club soda and they turned out great! Love the seasoning too!

Hands-down the absolute BEST sweet potato fries I've ever had! I don't know what it is about the cornstarch slurry, but it made all the difference in the world.

Definitely the best sweet potato fries I've made, and among the best I've had. My only change would be that I'd cut the fries into 1/4" by 1/4" strips.

FINALLY!  CRISPY sweet potato fries!  Most restaurants should take note of this one.  I'll never eat fries any other way.

I was intrigued by the use of a cornstarch and water batter and have been searching for a CRISP sweet potato fry.  I made one batch just like the recipe called out except I had to use plain water.  The other batch had no batter or coating whatsoever and went straight into the oil.  WOW what a difference.  No comparison.  You must use the batter coating.  Warning, it sets up pretty quick so dip everything you will be making to start and then put them in oil in batches.  I like the savory spiciness of the seasoning but my husband did not.  Try it anyway!

OMG...Unbelievably good!!! My first time using a deep fryer and first time making sweet potato fries...will certainly not be my last! They were incredibly crispy (thin cut, 8 minutes, drain for 1 minute and back in for 2 more minutes) and tasty (I skipped the salt). Thanks for sharing your recipe. Definitely 5 star rati g.
