Ingredients: 1/2 cup good mayonnaise; 2 tablespoons small-diced pickles or cornichons; 1 tablespoon Champagne or white wine vinegar; 1 tablespoon capers; 1 teaspoon coarse-grained mustard; Pinch kosher salt; Pinch freshly ground black pepper

Ina Garten's recipe for Tartar Sauce from Barefoot Contessa on Food Network is fresher than the store-bought stuff, and it's so easy it takes only five minutes.

Tartar Sauce

mayonnaise

small-diced pickles

Champagne or white wine vinegar

capers

mustard

kosher salt

black pepper

Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.

I worked for a seafood diner and ours included Worcestershire sauce 

This was too sour for my taste. The cornichons plus vinegar make is very sour. After making it exactly as the recipe described, I then modified it by adding more Mayo, about two tablespoons of chopped sweet pickles, 1 tablespoon of sweet pickle juice, along with a bit more mustard and some capers. Still a bit sour, so added a tbsp of EVOO (as per Tyler Florence’s recipe). I kept adding bits of Mayo and sweet pickles until it was almost ok. Will start next time with sweet pickles rather than cornichons, and won’t add vinegar all at once. Actually, next time I’ll start with a different recipe.
