Step 1

In a cocktail shaker muddle the orange slices so they release all their juice and essential oils. Can use any orange you like; navel, cara cara, blood, mandarin, etc...

Step 2

Add in a handful of ice.

Step 3

Measure in the tequila, simple syrup and thyme sprigs.

Step 4

Shake vigorously for 20-30 seconds.

Step 5

Strain over crushed ice in a rocks sized glass. Garnish with an orange slice and thyme sprigs.Clap the thyme sprigs in the palm of your hand before adding to the garnish, it releases their oils and makes for a fragrant drinking experience!
