Step 1
Rinse rice under running water. Place rice in a large pot of water. Bring to boil. Simmer for 5-6 minutes or until rice is tender. Drain. Leave to cool completely.
Step 2
Heat oil in a large wok or frying pan. Add chopped garlic and onions. Sauté, stirring occasionally, for 2-3 minutes or until onions are translucent. Add chicken. Sauté, stirring occasionally, for 9-10 minutes or until cooked through.
Step 3
Add whites of spring onions. Sauté, stirring occasionally, for 1 minute or until tender. Move the mixture to one side of the pan. Add eggs. Cook, stirring, for 2 minutes.
Step 4
Add cooked rice, soy sauce, oyster sauce and greens of spring onions. Stir to combine. Season with salt and pepper. Stir fry for 3-4 minutes. Garnish with chopped spring onions (scallions).
Step 5
Serve with sliced cucumber and lemon wedges.
