In a large bowl, cream together the butter, granulated sugar, and brown sugar using a stand mixer or an electric hand mixer. Add in the egg and vanilla and continue to beat until light and fluffy.

Scoop out 1-2 tablespoons of dough and place onto a lined cookie sheet about 2 inches apart. Bake for 8 to 10 minutes until golden brown on the edges. Cool on a wire rack or eat right out of the oven!
