Butter bread on both sides and lightly fry in a frypan. Smear one side of the toast with mustard.

Place cheese, chilli, coriander and onion into the Thermomix bowl and chop *8 sec/speed 8*. Divide the mixture between the toast. Place in the oven for 10 minutes, or until the cheese is melted.
Step 4
Meanwhile, fry the eggs until the white edges are crisp, but the yolks are still soft. Slide an egg on top of each toast.
Step 5
Serve hot with additional chillies on top.
