Step 1
To make the cheese coating, place the grated red Leicester in a non-stick frypan over medium-low heat. Stir to melt the cheese then let it bubble and cook gently until the oil starts to split. Tilt the pan to allow most of the oil to gather on one side, then scoop out the melted cheese directly into a bowl of very cold iced water. (This will separate any remaining oil from the cheese and solidify the cheese solids, which sinks to the bottom.) Remove the solidified cheese from the iced water and ring out any excess liquid. Finely chop and place on a baking tray lined with baking paper. Repeat process with parmesan.
Step 2
Preheat oven to 60°C fan-forced. Place cheese in the oven for 4 hours or until dehydrated and dry, then remove and cool completely. Place dehydrated cheese in a blender and whiz until a very fine powder. Add 2 tsp salt, turmeric and smoked paprika, and whiz until combined. Store in an airtight container until ready to use.
Step 3
For the chips, place 350ml water in a small saucepan over medium heat and bring to a simmer. Whisking continuously, gradually add ½ cup corn flour and the rice flour. Reduce heat to low and cook for 3-4 minutes, stirring with a spatula, until the mixture dries out slightly but is still sticky. Remove from heat and cool completely.
Step 4
Place cooled mixture in a food processor with the remaining 1/4 cup corn flour, baking powder and 2 tsp salt and whiz until a dough forms.
Step 5
Dust a tray with extra corn flour. Break off small pieces of the dough, dust with more corn flour and roll into irregular twisty shapes between your fingers. Place Twisties on the prepared tray (this will stop them from sticking).
Step 6
Half-fill a saucepan with sunflower oil and heat to 170°C. In batches, fry the Twisties for 1 minute 30 seconds, then drain on a wire rack. Spread Twisties on a baking tray and place in the oven at 60°C fan-forced for 6 hours or until completely dried out and crisp.
Step 7
Place the cheese dust in a bowl then add the Twisties and coat in the dust. Store in airtight container.
