Export 7 ingredients for grocery delivery
Step 1
Place the new potatoes and eggs in one saucepan and boil for about 10 minutes using the juice from the can.

While the potatoes are boiling, fry off the bacon until almost crispy.

Add chopped shallots for 2 minutes just to slightly soften.

Allow the potatoes and eggs to cool.

Cut the potatoes into halves or quarters depending on their size and cut eggs into 6ths.

Place the potatoes, bacon and shallots into a large bowl and mix gently.

In a smaller bowl mix together the mayonnaise, sour cream, salt and pepper.
Step 8
Add to potato mix and gently mix together. Add more mayonnaise and sour cream if needed.
Step 9
Finally place in the eggs and very gently fold.
Step 10
The yolks may come away from the whites.
Step 11
Sprinkle lightly with paprika just before serving.
