Step 1
In a small bowl put the ground flax seeds with 3 tablespoons of water, let it rest for 10 minutes, to make the flax egg. Prepare the rest of the ingredients in the meantime.
Step 2
Add all the ingredients to a food processor and blend until they're all finely chopped. Transfer the broccoli mixture to a large bowl and let it sit for 5 minutes. I use this resting time to do some washing and clear the bench!
Step 3
Lightly wet your hands and make the fritters approximately 1.5cm thick and 9cm diameter.
Step 4
Set a non-stick pan on medium-high heat with a drizzle of olive or coconut oil. Add the fritters and pan fry around 4 minutes on each side, until they are golden brown, crispy on the outside and soft on the inside. Flip them carefully with a flat spatula so they don't break. Enjoy!
