Place chocolate, rice malt syrup and vanilla in a heatproof bowl set over a saucepan of gently simmering water (don’t let the bowl touch the water) and stir until chocolate is melted and mixture is combined and cool.
Step 2
Using an electric whisk, whisk aquafaba to stiff peaks. Add one-quarter whipped aquafaba to melted chocolate, stirring until combined. Add chocolate mixture to remaining aquafaba and gently fold to combine. Divide among six 350ml serving glasses and chill overnight.
Step 3
Top with the raspberries and pistachios to serve.
