Step 1
Put water for pasta on to boil, and place a skillet over medium-high heat. Cook the pasta to al dente.
Step 2
Once the skillet is hot put 1/2 tablespoon of the olive oil in, then the butternut squash, kale and garlic. Stir, then reduce heat to medium and cover to cook until squash is nearly fork tender. Then stir, and cook uncovered for approximately 2 more minutes. Remove from burner.
Step 3
Add the remaining oil and the pasta. Toss gently and serve topped with grated Parmesan.
