Witches' Brew

Step 1

In a small saucepan, bring the sugar and the water to a boil.

Step 2

Cook the sugar water, while stirring, until the sugar has dissolved.

Step 3

Let the simple syrup cool.

Step 4

Place the kiwis, 1/2 cup of the mint, and the simple syrup in a blender, cover, and process until blended.

Step 5

Pour the kiwi mixture into a large pitcher and stir in the vodka.

Step 6

Refrigerate the kiwi mixture until it is chilled, for at least 2 hours and up to overnight.

Step 7

Stir the ginger ale into the kiwi mixture just before serving.

Step 8

Serve the Witches' Brew over the ice, garnished with the extra mint.
