Step 1
In a large skillet over medium high heat add the oil and onion. Sauté until tender and then add the ground beef. Cook until brown and cooked throughout. Add tomato paste, Italian seasoning and basil. Let simmer on low heat.
Step 2
In a medium sized bowl add nutritional yeast and add a bit of boiled water and stir until a thick sauce texture is created adding more water as needed.
Step 3
Preheat oven to 375 degrees and spray a 9x13 inch pan with non stick spray and set aside.
Step 4
To make the lasagna start by spreading 1/2 the meat sauce on the bottom. Arrange 1/2 the zucchini slices in a single layer over the meat. Spread 1/2 cup of the nutritional yeast, on top of the zucchini. Repeat the layers one more time.
Step 5
Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake and additional 20-25 minutes. Let it cool for 10 minutes before serving.
