No matter what you stuff them with, the concept of pillowy, soft dough encasing a luscious, super flavorful filling is enough to warm you up from inside to out. Well, with our homemade dumpling recipe, we’re bringing that warm, fuzzy feeling right to your very own kitchen table. 

Homemade Dumplings Recipe by Tasty

all-purpose flour

salt, divided

In a large bowl, combine the flour, 1 teaspoon of salt, and the warm water and mix until well-combined.

Roll out dough on a floured surface and knead until smooth.

Roll out 1 piece of dough into a thin log and divide into 6 or 8 pieces, depending on the size of dumplings you want. Repeat with the remaining dough portions.

Lightly flour the dough pieces and roll out 1 piece into a thin circle roughly 4-inches (10 cm) in diameter.

Keep the dumpling wrappers separated with a small piece of parchment paper and repeat with the remaining dough.

Combine the cabbage, green onions, garlic, ginger, soy sauce, and sesame oil in a medium bowl and mix until well-incorporated.

For the pork filling, combine the ground pork with the remaining teaspoon of salt, the pepper and 1 cup (125g) of the cabbage mixture and stir until well-incorporated.

For the veggie filling, combine the mushrooms and carrot and microwave for 3 minutes, until soft. Add 1 cup (125g) of the cabbage mixture and stir until well-incorporated.

For the shrimp filling, combine the shrimp with 1 cup (125g) of the cabbage mixture and stir until well-incorporated.

To assemble the dumplings, add roughly 1 heaping tablespoon of filling to the center of a dumpling wrapper. With your finger, lightly coat half of the outside of the wrapper with water. Fold the moistened half of the wrapper over the filling and, using your fingers, pleat the edges to seal. Repeat with the remaining fillings and wrappers.

Heat the oil over medium high in a large skillet and add a few dumplings, cooking them in batches. Once the bottoms of the dumplings start to brown, add a splash of water and cover with a lid. Steam for about 5 minutes, or until the dumplings are cooked and the water has evaporated. Transfer the cooked dumplings to a paper towel-lined plate to remove any excess moisture or grease.

In a small bowl, combine the soy sauce, rice vinegar, sesame oil, and pepper flakes and stir to combine. Serve the dumplings immediately with the dipping sauce.

Suet dumplings are a British classic - especially served with a rich, gravy-based stew! Here&#039;s how to make perfect suet dumplings.

Traditional British Suet Dumplings

130 g (~ 1 cup) vegetable suet

260 g (~ 2 cups) self-raising flour

herbs

tsp salt

tsp black pepper

tsp garlic granules

250 ml (~ 1 cup) water

Add the vegetable suet and self-raising flour to a large bowl, and add the remaining dry ingredients. Mix to combine. Add the water, and mix with a fork to create a sticky dough.

Dollop the dumpling mixture on top of your favourite stew when it's nearly cooked. Add a lid, and return the stew to the oven for a further 20-25 minutes, until the dumplings are firm. I like to remove the lid for the final 10-15 minutes of cooking time, to help them to crisp up a little.

I made this recipe as instructed. The only change was adding some fresh rosemary from my garden.

I separated into 6 x 100g dumplings and cooked for 5 minutes in my pressure cooker with a lamb stew. They were exceptionally light and fluffy!

Baked Rice Paper Dumplings

lb mixed mushrooms, finely diced (or 454 grams)

lb firm tofu, (or 454 grams, shredded)

carrot (shredded)

spring onions (finely chopped)

Tbsp fresh ginger (minced)

garlic (minced)

Tbsp vegetable oil (plus more for brushing)

Tbsp rice vinegar

cornstarch (optional, for thickening)

rice paper

Sesame seeds

sugar

rice vinegar

chili oil

sesame seeds

Preheat

Preheat the oven to 400°F (200°C), convection setting if available.

For the dipping sauce, dissolve the sugar in hot water in a small bowl. Add the soy sauce, rice vinegar, chili oil, minced garlic, toasted sesame seeds, and sesame oil. Stir until well combined and set aside.

Preheat Oven and Prepare Dipping Sauce:

Prepare Filling

Heat the vegetable oil in a pan over medium-high heat. Sauté the mushrooms and tofu until they begin to brown. Remove from heat.

Combine

In a large bowl, combine the sautéed tofu and mushroom mixture with the shredded carrot, spring onions, ginger, garlic, soy sauce, rice vinegar, and cornstarch (if using). Mix well to ensure all ingredients are evenly coated.

Prepare Filling:

Assemble Dumplings

Fill a large bowl with warm water. Soak one rice paper sheet at a time until it is soft but still slightly firm.

Cut it in half

Lay the softened rice paper on a clean, damp towel. Cut it in half down the middle.

Fold the sides

Place some of the tofu-mushroom filling in the center of each rice paper half. Fold the sides over the filling to create a triangle shape, then continue rolling tightly.

Brush the tops

Place the dumplings on a baking sheet brushed with vegetable oil, making sure they do not touch. Brush the tops of the dumplings with additional oil.

Assemble Dumplings:

Bake in the preheated oven for 10-15 minutes, or until the dumplings are golden brown and crispy. It's a good idea to flip them halfway through baking to ensure even crispiness.

Serve the dumplings hot, accompanied by the prepared dipping sauce on the side. Garnish with sesame seeds if desired.

These were so delicious and the sauce went very well with it! Next time, I'm making the carrot a bit smaller than I did today so it will be easier when filling. One question, can I freeze these once I baked them or should I eat them in the coming days? Thanks for the recipe!

Die Knödel schmeckten echt lecker und die Soße war sehr gut dazu! Nächstes Mal werde ich die Karotte etwas kleiner schredden als heute, damit es leichter ist die Knödel zu rollen. Took me a while to chop everything so I would say that if you are also a slow vegan turtle, then expect prep time to be longer. Otherwise I loved the recipe. I added a bit of shredded cabbage and a bit of shredded turnip, pepper and some more garlic.
This was such an awesome fun and delicious meal.

How do you manage your dumplings don't stick on the baking sheet ? Even brushed with oil, the dumplings remained sticked on it ; I had to break them all to be able to eat them.

Super delicious meal. It took me a little longer to work the rice paper wrappers, but well worth it. Reheated a half dozen the next day in a cast iron skillet. ❤️
