After 10 minutes, measure your internal temperature of the rack of lamb by using the method above.If you want rare it would be 145 degrees F.If you want medium it would be 160 degrees F.If you want well done, it would be 170 degrees F.Note: The USDA does recommend cooking all lamb products to 160 degrees F.
