Step 1
Using a sharp knife, score steak on both sides in a crosshatch pattern. Combine paprika, 1/2 teaspoon salt, garlic powder, cumin, oregano and ground pepper in a small bowl; rub on both sides of the steak. Place the steak in the basket of an air fryer.

Meanwhile, combine yogurt, cilantro, lime zest, lime juice, garlic, chipotle (or cayenne) and the remaining 1/8 teaspoon salt in a small bowl. Sprinkle the rolls with paprika, if desired, and serve with the sauce.
