Step 1
Begin by cutting your sweet potatoes in wedges or desired stick sizes. If you prefer to have the skins peeled, you can do so here as well.

Place in a bowl of cold water for about an hour (this helps with making it super crispy and tender). If you don't have time, you don't have to do this. In the meantime, make your honey mustard: mix honey, mustard, mayo, dijon, vinegar and salt and pepper. Mix well and set aside.
Step 3
Remove your sweet potatoes from the water and dry well with paper towels. Toss with all your spices and olive oil. Place your fries with the air fryer or steam crisp setting at 400 degrees for about 15-20 minutes, flipping halfway. Timing may vary depending on your air fryer so check on it to make sure it's to your liking! Cook in batches if needed and make sure they're evenly layered in the air fryer. Top with flakey salt and serve with your honey mustard.
