Step 1
In a bowl, mix together the diced apple (no need to peel it), raisins, pine nuts and sugar. Set aside.
Step 2
Cut the rolled rectangle of puff pastry into 6 squares by cutting the length in half and then the height into 3 equal parts. Now with a knife, cut some horizontal lines into one HALF of each square.
Step 3
Spread a generous spoonful of cream cheese onto the non-cut half of each square, top with 1 tbsp of apple mixture, and then take the cut side and bring it on top of the mixture over to the other side, so you get a little filled rectangle. Seal the edges with a fork by pressing it down like you would for ravioli. That prevents it from opening up during baking.
Step 4
Bake in a pre-heated, non-fan oven at 390°F for 20-25 minutes.
Step 5
Sprinkle some icing sugar on top and serve hot or cold.
